We are so excited about the opening of Garage Pizza! What gave you the idea, and why now?
Dan has always wanted his own pizza shop and we are both huge pizza lovers. We have always been sad that you can’t get a great pizza in town, and we have to go further afield to get our fix of a really great pizza. We have been looking for the right premises for a while, and we waited (very patiently) for No 6 Northampton Road to come up. Tell us what you will be offering up to Harborough pizza fans. To start with, we will be serving traditional 12” sourdough pizzas in a Neapolitan style, but we aim to bake at a lower temperature in order to create a crispier base – we’re not keen on a soggy-bottomed pizza! We love a Detroit-style pizza, too, which we will introduce when we’ve got the basics right – watch this space! We plan to be open Wednesdays to Sundays from 5pm to 9pm until we find our feet. Then, we will open at lunchtimes to sell pizza by the slice and also hot made-to-order panouzzo sandwiches. We are going to be collection-only for a while, but we have a beautiful upstairs space that we want to transform into a small restaurant, and also as a space to hire out for the community. What do you hope customers will find different about Garage Pizza? Our customers will find simply the best (and most reasonably-priced) pizza for miles. Organic, sourdough bases, slow fermented with the highest-quality seasonal ingredients made by passionate people. We have our San Marzano tomato sauce recipe already honed and ready to go, plus we have been testing out different dough hydration and flours for months in order to get the tastiest and crispiest pizzas – we’ve eaten a LOT of pizza! Sounds good! With that in mind, what is your favourite pizza on the new menu? My favourite pizza on the menu is called ‘The Classic One’ which is olives, red onions, capers, anchovies, chilli, oregano and parmesan to finish – simple and delicious. Dan’s favourite is ‘The Double Garage’ which is a double serving of thinly sliced pepperoni – he’d also add an nduja mayo dip to dunk the crusts. Will there be anything else available? We will be serving some delicious salads, garlic bread, a large selection of dips and desserts, including amazing gelato from our talented friends in Cambridge (Jack’s Gelato) and Bakehouse Tiramisu! We will also be selling some merch, the olive oil that we use and other bits and bobs. And finally, when can we come? We plan on being open in May. We can’t wait to welcome our wonderful Bakehouse community and beyond to Garage Pizza.
